Blueberry tart recipe

This tart is so yummy, light and fresh – you can make it with any fresh berry…it is all egg-free and nut-free – bonus!!

Blueberry Tart

Flan crust:

1 cup flour

2 tbsp sugar

pinch salt

1/2 cup butter or margarine

1 tbsp vinegar

Filling:

1/2 cup sugar

2 tbsp flour

dash of cinnamon

3 cups fresh blueberries

Crust:  Combine flour, salt and sugar.  Work in butter or margarine with fingers or a pastry blender.  Mix in vinegar.  Spread crust on bottom and sides of a 9″ flan pan (fake bottom).

Filling:  Combine sugar, flour and cinnamon.  Add 2 cups of blueberries and mix.  Pour over crust.  Bake at 400 degrees for 1 hour.  Remove from oven sprinkle with remaining 1 cup of blueberries.  Dust with icing sugar before serving.
